How to Make Peach and Chile-Marinated Salmon with Grilled Peaches

1. Prepare Marinade

Blend one halved and pitted peach with the serrano pepper, fresh ginger, lime zest and juice, two tablespoons of olive oil, and sea salt to create a marinade.

2. Marinate Salmon

Place the salmon fillet in a bowl or shallow dish and pour the peach mixture over it, marinating for 15 to 30 minutes.

3. Prepare Peaches for Grilling

Halve and pit three peaches, and brush them with olive oil.

4. Grill Salmon and Peaches

Grill the marinated salmon fillet for about 3 to 4 minutes on each side and grill the peach halves until dark grill marks form and they are slightly softened.

5. Assemble and Serve

Arrange the grilled salmon and quartered grilled peaches on a serving platter, and if desired, sprinkle with pickled chiles and garnish with fresh cilantro.
