    How to Make Pistachio-Lemon Bars

    1. Prepare the Pan and Preheat Oven

    Preheat the oven to 350 degrees Fahrenheit (177 degrees Celsius) and line an 8-inch square pan with parchment paper or aluminum foil.

    2. Make the Crust

    In a food processor, combine the all-purpose flour, confectioners' sugar, kosher salt, and cold butter until it resembles fine crumbs. Then mix in the rough-chopped pistachios and press the mixture into the prepared pan. Bake for 20 minutes until the edges are golden brown.

    3. Prepare the Filling

    While the crust is baking, whisk together the eggs and sugar. Mix in the baking powder, the remaining flour, lemon zest, and lemon juice to create the filling.

    4. Bake with Filling

    Pour the filling over the baked crust and return to the oven. Bake for another 20 minutes until the filling is set.

    5. Cool and Finish

    Allow the bars to cool completely, then dust with confectioners' sugar and cut into 16 bars.
