    How to Make Peanut Butter, Oat, and Jam Bars

    1. Prepare the Pan and Preheat Oven

    Preheat your oven to 350°F (175°C) and line an 8-by-8-inch baking pan with parchment paper, with an overhang for easy removal, and lightly spray it with nonstick spray.

    2. Mix Wet Ingredients

    In a large bowl, combine the oil, honey, peanut butter, and kosher salt. Whisk until smooth and well-blended.

    3. Add Dry Ingredients

    Whisk the baking powder into the mixture until no lumps remain, then stir in the quick-cooking oats and whole-wheat flour until just combined. Set aside ½ cup of this mixture.

    4. Assemble the Base Layer

    Press the oat mixture firmly and evenly into the prepared baking pan, then spread the jam evenly on top.

    5. Add Toppings and Bake

    Sprinkle the reserved oat mixture and the chopped salted peanuts over the jam, then bake for 20 to 25 minutes until golden brown.

    6. Cool and Chill

    Allow the bars to cool completely, then transfer to the fridge to chill before cutting into 12 bars.
