    How to Make Bacon and Pecan Pralines

    1. Prepare Praline Base

    Begin by combining the dark brown sugar, sour cream, and unsalted butter in a heavy saucepan. Place the saucepan over medium heat and stir occasionally until the butter has completely melted into a smooth mixture.

    2. Cook to Soft Ball Stage

    Once the butter has melted, increase the heat slightly and let the sugary concoction boil without stirring. Keep a close eye on the candy thermometer; reaching 235°F is essential for achieving the perfect consistency that allows the pralines to set properly.

    3. Add Pecans, Bacon, and Vanilla

    Remove the saucepan from the heat and allow the mixture to cool for about 2 minutes. After the cooling period, stir in the toasted pecan halves, crumbled bacon, and vanilla extract. Continue stirring for 1 to 2 minutes until the praline mixture becomes thick and creamy.

    4. Form Pralines

    Use two tablespoons to drop spoonfuls of the mixture onto wax or parchment paper, forming 1½-inch pralines. Allow them to cool and set completely before enjoying. Once set, store your pralines in an airtight container to keep them fresh.
