    How to Make Bacon and Pecan Pralines

    1. Combine Ingredients and Heat

    In a heavy saucepan, combine the dark brown sugar, sour cream, and unsalted butter. Over medium heat, allow the butter to melt completely. Stir gently to help the ingredients combine into a smooth mixture.

    2. Boil to Soft-ball Stage

    Once the butter has melted, let the mixture come to a boil. Attach a candy thermometer to the side of the saucepan to monitor the temperature. Without stirring, allow the mixture to boil until it reaches 235°F (113°C), which is the soft-ball stage.

    3. Cool and Add Remaining Ingredients

    After reaching the correct temperature, remove the saucepan from the heat and let the mixture cool for about 2 minutes. Stir in the toasted pecan halves, crumbled bacon, and vanilla extract into the mixture. Continue stirring for 1 to 2 minutes until the mixture becomes thick and creamy.

    4. Form Pralines

    Using two tablespoons, drop the mixture onto wax or parchment paper to form 1½-inch pralines. Ensure that the patties are even and hold their shape as they cool.

    5. Cool and Store

    Allow the pralines to cool completely, letting them set into their delightful, chewy form. Once cooled, store your Bacon and Pecan Pralines in an airtight container to keep them fresh and flavorful.
