1. Preheat Oven and Prepare Dough
Preheat your oven to 450°F. Lightly grease a baking sheet with olive oil. Shape the pizza dough into a round or rectangle and place it on the prepared baking sheet. Bake for about 15 minutes, until browned and puffed.
2. Prepare Avocado Topping
In a bowl, mash the avocados until smooth. Add lemon juice and chopped cilantro, then season with kosher salt and freshly ground black pepper to taste.
3. Assemble and Finish Pizza
Remove the crust from the oven and let it cool slightly. Spread the avocado mixture evenly over the crust. Drizzle with extra-virgin olive oil, sprinkle with more fresh cilantro, and top with Pistachio-Almond Dukka or toasted sesame seeds.
Prepare your dough at home with a slow fermentation process, preferably overnight in the fridge, to develop flavor and texture.
Preheat a pizza stone or baking steel in the oven for at least 45 minutes for a scorching hot surface that creates a crispy base.
Start with a thin base sauce before avocado slices and add avocado and dukkah post-bake to preserve textures and flavors.
Aim for around 70% hydration for a wetter dough that yields an airy crust, and work with room temperature dough for better stretching.
Choose avocados that yield to gentle pressure without being mushy to maintain structure and prevent overpowering other flavors.
