1. Wash and Soak Red Beans
First, wash the red beans thoroughly in a large bowl by rinsing them several times until the water runs clear. Soak them in plenty of water for about an hour.
2. Prepare Ingredients and Start Cooking
Drain the beans and transfer them to a large pot. Add 7 cups of water along with the well-drained lotus seeds and the soaked tangerine peel. Bring the mixture to a boil over medium-high heat. Once it reaches a rolling boil, reduce the heat to a gentle simmer and cover the pot with the lid slightly cracked. Let it simmer for about 1¼ to 1½ hours, or until the beans and lotus seeds are tender.
3. Add Sugar and Final Cooking
When the beans and seeds are tender, add the sugarcane sugar or dark brown sugar to the pot. Stir well to combine and let it cook for another 5 minutes, or until the sugar is fully dissolved and well integrated into the mixture.
