How to Make Crispy Sesame Banana Bites

1. Combine Dry Ingredients

Start by combining the dry ingredients. In a large bowl, mix together the rice flour, tapioca flour, sugar, and salt. This ensures that the flavors are evenly distributed throughout the batter.

2. Prepare the Batter

Next, prepare the batter by slowly adding the water to the dry mixture. Stir continuously to create a smooth and thick batter. Let this mixture rest for 30 minutes, which allows the flours to fully hydrate and results in a better texture.

3. Add Sesame Seeds

After the batter has rested, stir in the sesame seeds. This will give your banana bites a delicious, nutty crunch.

4. Prepare Bananas

While the batter is resting, prepare the bananas by peeling them and cutting them into 24 pieces. Set them aside while you get the frying setup ready.

5. Heat Oil

Place a slotted spoon or spider near your stovetop for easy access during frying. Add about 2 inches of peanut oil to a deep-fryer, wok, or heavy pot and heat it to 360°F. You can test the oil's readiness by dipping a wooden spoon into it; if small bubbles form around it, the oil is ready.

6. Fry Bananas

7. Drain and Serve

Once the bananas are a light golden color, lift them out with your slotted spoon or spider and let the excess oil drain off. Transfer the fried bananas to a plate.
