How to Make Cucumbers with Cream and Mint

1. Prepare and Salt Cucumbers

Peel the cucumbers and slice them into even pieces, removing any large seeds. Place the cucumber slices in a bowl and sprinkle them lightly with salt. Let them sit to draw out excess water.

2. Make Dressing

In a separate bowl, whisk together the heavy cream, olive oil, lemon juice, and a touch of freshly ground black pepper.

3. Combine and Season

Drain the salted cucumbers well and combine them with the prepared dressing. Toss gently to coat each slice. Chop the mint leaves and add them to the salad, then adjust seasoning if necessary.
