How to Make Cheese Puffs (Gougères)

1. Prepare Liquid Mixture

Combine water, butter, and salt in a heavy-bottomed saucepan over medium heat, allowing the butter to melt completely and the mixture to come to a gentle simmer.

2. Add Flour

Reduce the heat and add flour all at once, stirring vigorously until the mixture forms a smooth dough that pulls away from the sides of the pan.

3. Dry Out Dough

Continue stirring the dough over low heat for about one minute to dry it out slightly, forming a cohesive mass.

4. Incorporate Eggs

Transfer the dough to a mixing bowl, let it cool slightly, then beat in two eggs, one at a time, until the dough is smooth and glossy.

5. Add Cheese

Stir in the grated Gruyère cheese until it is evenly distributed throughout the dough.

6. Bake Gougères

Preheat the oven to 400°F, line baking sheets with parchment paper, spoon or pipe the dough onto sheets, and bake for 10 minutes. Then lower the temperature to 375°F and continue baking for an additional 15 minutes until golden brown and hollow sounding.

7. Final Touch

Pierce each puff with a sharp knife to release steam and prevent soggy interiors. Serve warm or reheat if necessary.
