How to Make Spaghetti with Black Truffles

1. Prepare Pasta Water

Begin by bringing a large pot of water to a boil. Add in the kosher salt to season the water, which will enhance the flavor of the pasta as it cooks.

2. Brown Butter and Add Truffles

While the water is heating, melt the unsalted butter in another large pot over medium heat. Allow the butter to cook until it turns a golden brown, about 2 minutes. Stir in the drained black truffles, letting their earthy essence meld with the butter.

3. Cook Spaghetti

Once the water is boiling, add the spaghetti and cook it until it is just al dente. Before draining the pasta, reserve ½ cup of the cooking water.

4. Combine Spaghetti and Sauce

Combine the cooked spaghetti with the truffle butter in the pot, adding in about ¼ cup of the reserved pasta water to start. Stir everything together until the pasta is well-coated with the truffle-infused butter. If the mixture seems dry, add a bit more of the reserved pasta water, a tablespoon at a time, until you reach your desired consistency.
