Medium Zucchinis, Trimmed, cut into a medium sized dice

1. Prep
Start with the zucchinis. Trim the ends off, cut them in half lengthwise, and then slice into half-moons. Slice the garlic and set aside. Zest the lemon and then juice it, keeping both zest and juice separate. Chop the parsley and set it aside.
2. Saute
Heat a large pan over medium heat. Once hot, add the olive oil. When the oil is hot but not smoking, add the sliced zucchini and a pinch of salt to the pan. Sauté while stirring frequently. The zucchini should still have a slight bite to it after cooking – it should not be completely tender.
3. Add Aromatics
Next, add the garlic and sauté until it is fragrant and just begins to turn a pale golden color. This should take about a minute or two.
4. Finishing Ingredients
Remove the pan from the heat. Add the lemon zest, juice and parsley to the pan. Stir everything together to combine. Check for seasoning and adjust with salt as needed, then serve.
