1. Prepare the baking pan
Lightly grease a 9x13-inch baking pan to ensure your bars come out smoothly later.
2. Prepare the crust mixture
Combine 1.75 cups of all-purpose flour, 0.67 cups of confectioners' sugar, and 0.25 cups of cornstarch in a food processor. Pulse these ingredients together until well mixed.
3. Add vegan margarine to crust mixture
Add in 1 cup of vegan margarine, a spoonful at a time, and continue to pulse until the mixture resembles coarse meal.
4. Form and chill the crust
Sprinkle the mixture evenly into the prepared baking pan and press it down firmly to form an even layer. Refrigerate the crust for about 30 minutes to help it set.
5. Bake the crust
Preheat your oven to 350°F. Once chilled, bake the crust for 25 minutes, then set it aside to cool.
6. Soak agar flakes
Soak 3 tablespoons of agar flakes in 1.33 cups of water for about 15 minutes in a saucepot.
7. Prepare lemon juice and zest
Zest and squeeze your lemons to get 1 tablespoon of lemon zest and 0.67 cups of fresh lemon juice.
8. Dissolve agar flakes
Once the agar has soaked, bring it to a boil over medium heat, stirring occasionally to ensure it dissolves completely. This usually takes about 10 minutes.
9. Add sugar and turmeric
Add 1.25 cups of granulated sugar and 0.13 teaspoons of turmeric, cooking for another 3 minutes until the mixture is well combined and slightly thickened.
10. Add arrowroot mixture
Turn down the heat to medium and add the mixture of 3 tablespoons of arrowroot powder dissolved in your fresh lemon juice.
11. Add lemon zest and soy milk
Add the lemon zest and 0.25 cups of soy milk. Whisk this mixture continuously for about 5 minutes until it thickens and starts to bubble gently.
12. Pour filling over crust
Pour the thickened lemon filling over the cooled crust, spreading it out evenly.
13. Cool and chill
Allow the bars to cool at room temperature for about 20 minutes before transferring them to the refrigerator to set completely. This will take around 3 hours; you'll know they're ready when the filling is slightly jiggly but firm.
14. Serve
Before serving, dust the top of the bars with a light sprinkling of confectioners' sugar using a sifter or fine-mesh strainer. Slice the bars into squares and enjoy your perfectly tangy, sweet Vegan Lemon Bliss Bars.
