How to Make Herbed Cashew Cheese

1. Blend Dry Ingredients

Place the cashews, nutritional yeast, salt, herbes de Provence, pepper, lemon juice, and garlic into the food processor. Pulse to combine until reaching a wet, coarse, mealy texture.

2. Achieve Perfect Consistency

Start by adding 2 tablespoons of water and blend the mixture. Gradually add more water while blending until the cashew mixture becomes thick and spreadable, with a consistency similar to thick hummus.

3. Adjust Seasonings

Taste the Herbed Cashew Cheese and adjust the seasonings if needed. You might want more salt, a touch more lemon juice, or an extra sprinkle of herbes de Provence.

4. Store

Transfer the cheese into a covered container and store it in the fridge, where it will keep fresh for up to 5 days.
