1. Prepare the Marinade
Whisk together the vegetable broth, rice vinegar, olive oil, soy sauce, curry powder, cumin seeds, and mirin (if using) until smooth and homogenous.
2. Marinate the Tofu
Place the tofu slices into a large mixing bowl and pour the marinade over them. Ensure each slice is well-coated by gently turning them in the mixture. Allow the tofu to marinate for at least 20 minutes.
3. Cook the Tofu
Grill or bake the tofu according to the instructions on pages 128 and 129, respectively, until the tofu is savory and slightly crispy.
