1. Prepare and Season Tofu
Cut the block of extra-firm tofu into your desired size, then press it between some towels to remove excess moisture. Sprinkle the tofu with kosher salt.
2. Create Green Curry Glaze
Whisk together full-fat, unsweetened coconut milk with Thai green curry paste and a pinch of salt to create the green curry glaze.
3. Brown the Tofu
Heat neutral oil in a skillet over medium-high heat. Add the tofu and cook undisturbed for a few minutes until the bottom is golden brown. Flip the tofu and repeat until all sides are golden.
4. Stir-Fry Vegetables
In the same skillet, add more oil if needed and stir-fry your choice of chopped vegetables until they're bright and just tender.
5. Simmer with Curry Glaze
Pour the remaining coconut-curry mixture over the veggies in the skillet. Let it simmer gently until it thickens slightly.
6. Finish with Lime Juice
Take the skillet off the heat and stir in the fresh lime juice. Add the tofu back into the skillet, gently tossing to coat with the curry glaze.
