How to Make Fiery Sweet Potato Mash

1. Bake Sweet Potatoes

Place sweet potatoes on a sheet pan and bake in a preheated 375-degree oven for 75 minutes until very soft. Allow to cool, then slip off the skins and mash to a smooth consistency.

2. Warm Coconut Milk with Curry Paste

In a small saucepan over low heat, warm the coconut milk with the Thai red curry paste, stirring occasionally until flavors meld.

3. Combine Mashed Potatoes with Flavorings

Add the warm coconut milk mixture to the mashed sweet potatoes, along with half of the dark brown sugar, half of the unsalted butter, and the salt. Mix well until combined.

4. Bake the Mash

Heat the oven to 425 degrees and transfer the mash into a baking dish. Cover with foil and bake for 20 minutes.
