1. Combine ingredients in a dish
Gather a cazuela, shallow casserole, skillet, or fondue dish. Combine the rum, sugar, cinnamon sticks, and lemon peel in your chosen dish. Place it over low heat and stir gently until the sugar is completely dissolved.
2. Ignite the rum mixture
Using a long match, carefully ignite the rum mixture. The flames will create a captivating visual effect, dancing with long blue hues. Allow the flames to continue for about one minute.
3. Add hot coffee
Once the flames have almost died down, slowly pour in the hot, strong coffee. The coffee will extinguish any remaining flames and blend harmoniously with the rum mixture. Stir everything together gently to ensure a consistent flavor.
Keep a fire extinguisher or a damp cloth nearby when working with open flame and alcohol.
Start with a high-quality, dark-roasted coffee and a darker, aged rum to complement the coffee's richness.
Pour the flamed rum into the coffee slowly to extinguish the flame and infuse caramelized flavors.
Exercise caution by turning off fans and keeping flammables away. Let the sugar cube flame to caramelize the sugar, but don't let it burn too long.
Use only the outer zest and twist the peels over the glass to release essential oils into the drink.
