1. Combine Ingredients
Start by combining the ground beef (or the mix of beef and pork), crushed pork rinds, eggs, minced garlic, salt, and black pepper in a large bowl. Mix everything thoroughly to ensure that the flavors and textures are evenly distributed. Form the mixture into meatballs about 1 inch in size, aiming for around 36 meatballs in total.
2. Brown Meatballs - First Batch
Heat 1 tablespoon of avocado oil in a large skillet over medium heat. Add half of the meatballs to the skillet, making sure not to overcrowd them. Brown the meatballs on all sides, which should take about 4 minutes. Once browned, transfer these meatballs to a large slow cooker.
3. Brown Meatballs - Second Batch
Repeat the browning process with the remaining meatballs, using the second tablespoon of avocado oil. Again, ensure they are browned on all sides and then transfer them to the slow cooker.
4. Slow Cook Meatballs
Pour your prepared Low-Carb BBQ Sauce over the meatballs in the slow cooker. Set the slow cooker to its low setting and cook for 3 to 4 hours. You'll know they're ready when their internal temperature reaches 165°F.
5. Serve Meatballs
Once done, serve the meatballs straight from the slow cooker, spooning some of the delicious sauce over them. If you like, garnish with chopped fresh parsley for a touch of color and freshness.
