    How to Make Spicy Ginger-Habanero Infusion Vinegar

    1. Prepare Habanero Chiles

    Place the stemmed and seeded habanero chiles into a heatproof bowl. This bowl will later hold the hot vinegar mixture, so make sure it's sturdy.

    2. Combine Ingredients

    Combine the unseasoned rice vinegar, distilled white vinegar, minced fresh ginger, raw cane sugar, and a pinch of kosher salt in a small saucepan. Bring this mixture to a rolling boil over medium-high heat.

    3. Pour Mixture over Chiles

    Once the vinegar mixture is boiling, carefully pour it over the habanero chiles in the heatproof bowl. Allow the mixture to cool completely.

    4. Transfer and Store

    After the mixture has cooled, transfer it into a clean jar and seal it tightly. Store the jar at room temperature. This infused vinegar can be stored for up to one year.
