How to Make Fragrant Crispy Garlic Infused Oil

    1. Heat the Wok

Begin by heating a wok over high heat for about 30 seconds.

    2. Add Oil and Garlic

Once the wok is hot, add 1½ cups of peanut oil and the 2½ cups of thinly sliced garlic. Stir the garlic gently and reduce the heat to medium, ensuring that the garlic cooks evenly.

    3. Cook Garlic

Keep a close eye on the garlic as it begins to boil in the oil. Lower the heat to maintain a gentle simmer, and stir every minute to prevent the garlic from sticking together and to ensure it cooks uniformly. This step should take around 10 minutes.

    4. Strain and Cool

After the garlic has reached a light brown color, turn off the heat. Carefully strain the hot oil into a heatproof bowl using a fine-mesh strainer, separating the crispy garlic from the infused oil. Allow both the oil and garlic to cool to room temperature.

    5. Store Garlic-Infused Oil

Once cooled, transfer the garlic-infused oil into a sterilized glass jar and close it tightly. This aromatic oil can be stored at room temperature for up to one week or refrigerated for up to three months, ready to enhance your dishes with its deep, garlicky flavor.

    6. Store Fried Garlic

Finally, transfer the cooled fried garlic into a plastic container, cover, and refrigerate. These crispy garlic pieces will add a delightful crunch and burst of flavor to your meals.
