1. Prepare the shrimp
First, prepare the shrimp by peeling, deveining, and slitting their backs. Butterfly them by cutting deeper along the back without cutting all the way through. This will help them cook evenly and allow the marinade to soak in better. Rinse the shrimp under cold water, then drain them thoroughly.
2. Make the marinade
In an electric blender, combine 2 tablespoons of olive oil, lemon juice, onion, garlic, ginger, and your choice of chilies or cayenne pepper. Season with salt and freshly ground pepper. Blend everything until it forms a smooth paste.
3. Marinate the shrimp
Place the prepared marinade in a nonmetallic bowl. Pat the shrimp dry with paper towels, then mix them into the marinade, making sure they are well-coated. Cover the bowl and refrigerate for about an hour.
4. Prepare the grill
While the shrimp are marinating, prepare your charcoal grill. Aim to maintain a medium grilling distance, about 5 inches from the heat source.
5. Grill the shrimp
When you’re ready to grill, brush the shrimp with some additional olive oil to prevent them from drying out. Place the shrimp on the grill and season lightly with salt and pepper. As they cook, baste them occasionally with more olive oil. Grill the shrimp for about 5-10 minutes on each side, until they are slightly browned and cooked through.
