1. Prep Your Shrimp
Ensure the shrimp are dry by patting them with paper towels. Carefully thread the shrimp onto three 14-inch metal skewers, alternating the direction of the heads and tails for even cooking. Gently brush both sides of the shrimp with olive oil and season with a light sprinkle of salt and pepper. Apply a dusting of sugar on one side of each skewer to promote caramelization.
2. Grill to Perfection
Turn all grill burners to high, cover, and let the grill heat up for about 15 minutes. Prepare the cooking grate by cleaning it and applying a coat of oil to prevent sticking. Place the skewers sugar-side down onto the hot grate. If the shrimp have shifted, use tongs to snugly push them together on the skewer. Grill covered, and look for a light char, which should take about 4 to 5 minutes. Carefully flip the skewers using tongs and grill the other side until the shrimp turn pink and are slightly translucent, roughly 1 to 2 minutes.
3. Sauce and Serve
Using a pot holder or oven mitt, lift the skewers from the grill and use tongs to slide the shrimp into a pie plate containing your chosen sauce. Toss the shrimp to coat them evenly in the sauce, then return the plate to the grill. Stir and cook the shrimp with the sauce for about 30 seconds or until they are opaque and fully cooked. Remove the pie plate from the grill, complete your sauce with any additional ingredients as per the recipe, and give it one last toss. Arrange the shrimp on a serving platter and serve immediately with fresh lemon wedges on the side.
