1. Prepare the Shrimp
Pat the shrimp dry with paper towels to ensure a good sear on the grill. Thread the shrimp onto skewers, brush them with olive oil, and season generously with salt and pepper. Finally, sprinkle a small amount of sugar over them.
2. Prepare the Grill
If you’re using a charcoal grill, light your charcoal and pour it over one half of the grill, then set the cooking grate in place and allow it to heat for about 5 minutes. For those with a gas grill, turn all the burners to high and let the grill heat up for about 15 minutes, then adjust the burners as needed.
3. Heat the Sauce
Once your grill is hot, clean and oil the grate using paper towels and tongs. Place a disposable pan on the grill and heat your sauce for about 1 to 3 minutes. Then move the pan to the cooler side of the grill to keep the sauce warm without burning it.
4. Grill the Shrimp
Place the shrimp skewers on the grill with the sugared side facing down. Grill them for about 4 to 5 minutes until they are lightly charred and pink. Push the shrimp together on the skewers to ensure even cooking. Flip the skewers and cook for an additional 1 to 2 minutes on the other side until they are fully cooked.
5. Coat with Sauce and Serve
Transfer the grilled shrimp to the pan with the warm sauce and toss them to coat evenly. Serve immediately with lemon wedges on the side for an extra burst of flavor.
