How to Make Lemon Zest & Ritz-Crusted Cod Fillets

1. Preheat the Oven

Start by preheating your oven to 400°F. This ensures it’s hot and ready by the time your fish is prepared.

2. Prepare the Baking Dish

Drizzle 2 tablespoons of olive oil in a 9 × 9-inch ceramic baking dish, coating the bottom evenly.

3. Prepare the Fish Fillets

Place your cod fillets in the baking dish, turning them gently to coat each side with the olive oil. Season the fillets with 1.5 teaspoons of kosher salt and 0.5 teaspoons of freshly ground black pepper. The oil helps the fish cook evenly and prevents it from sticking to the dish. Bake the fillets for 10 minutes. You’ll see the fish glisten lightly with oil, signaling it’s ready for the next step.

4. Prepare the Crumb Mixture

While the fish is baking, combine 0.5 cups of Ritz cracker crumbs, 0.33 cups of panko, 2 tablespoons of minced fresh parsley, 2 teaspoons of minced garlic, and 1 teaspoon of grated lemon zest in a bowl. Add 3 tablespoons of melted butter, stirring until the mixture is moistened and crumbly.

5. Add Wine and Lemon Juice

6. Apply the Crumb Mixture

Pat the prepared crumb mixture evenly over the top of each fillet, pressing gently to ensure it adheres well.

7. Bake Until Cooked Through

Return the dish to the oven and bake for an additional 12 minutes. The fish should be cooked through in the center and the topping golden brown and crispy.

8. Finish and Serve
