    How to Make Lemon Zest Mahi Mahi with Olive-Caper Relish

    1. Preheat Oven and Prepare Baking Dish

    Preheat your oven to 425°F (220°C). Brush a small glass baking dish with a little olive oil to prevent the fish from sticking.

    2. Season Mahi Mahi Fillets

    Place the mahi mahi fillets in the prepared baking dish. Season each fillet generously with coarse kosher salt and freshly ground pepper. Then, brush the fillets lightly with olive oil.

    3. Prepare Olive-Caper Relish

    In a small bowl, combine the chopped kalamata olives, minced shallot, capers, fresh lemon juice, grated lemon zest, and a drizzle of olive oil.

    4. Top Fillets with Relish and Roast

    Spoon the olive-caper-lemon mixture evenly over the seasoned mahi mahi fillets. Place the baking dish in the preheated oven and roast for about 12 minutes. The fish is done when it flakes easily with a fork.

    5. Serve

    Transfer the cooked fillets to warmed plates. Spoon any remaining drippings from the baking dish over the top for added flavor. Serve immediately.
