A delightful and healthy cod dish baked with a lemon-garlic compound butter and vegetables.
Unsalted Butter, softened

1. Preheat Oven
Preheat your oven to 400°F (200°C) and position the rack in the lower-middle level.
2. Prepare Compound Butter
Mix the softened butter with the minced garlic and finely grated lemon zest in a small bowl.
3. Prepare Foil Packets
Cut four large pieces of aluminum foil, ensuring each piece is big enough to completely wrap around a cod fillet and the vegetables.
4. Assemble Packets
Place a cod fillet in the center of each piece of foil. Spread a portion of the compound butter on top of each fillet.
5. Add Vegetables
Add the sliced leeks, julienned carrots, and, if you like, the fennel around the fish.
6. Seal Packets
Carefully seal the foil packets by folding the edges together and crimping them tightly.
7. Bake
Place the sealed packets on a baking sheet and bake in the preheated oven for about 15-25 minutes, depending on the thickness of the fillets.
8. Serve
Once done, carefully open the packets, being mindful of the hot steam. Serve the cod and vegetables immediately with lemon wedges on the side.
