    How to Make Lemon-Basil Halibut Steaks

    1. Marinate the Halibut

    In a sealable plastic bag, whisk together 6 tablespoons olive oil, minced garlic, dried basil, salt, pepper, and lemon juice. Place the halibut fillets into the bag, seal, and gently turn to ensure each fillet is evenly coated with the marinade. Refrigerate and let marinate for at least 30 minutes, or up to 2 hours for deeper flavor infusion.

    2. Sear the Fillets

    Heat 1 tablespoon of light olive oil or vegetable oil in a large, flat skillet over high heat until it starts to smoke. Carefully lay the marinated fillets in the skillet and brush the tops and sides with the remaining marinade. Sear the fillets for approximately 3 minutes until a golden crust forms; then flip and sear the other side for another 3 minutes, brushing with more marinade.

    3. Cook to Perfection

    After searing, reduce the heat to medium. Continue cooking the halibut for an additional 2 to 4 minutes on each side, depending on thickness. The fish is done when the center is just opaque. Brush occasionally with the marinade during the final cooking process.

    4. Serve and Garnish

    Transfer the cooked halibut to a serving plate. If desired, sprinkle with chopped parsley for a touch of color and freshness.
