How to Make Char-Grilled Tuna Steaks with Zesty Lemon Basil-Walnut Pesto

1. Season Tuna Steaks

Place the albacore tuna steaks on a plate. Sprinkle both sides generously with coarse kosher salt, freshly ground pepper, and the grated zest of one lemon. Brush the tuna steaks lightly with extra-virgin olive oil. Allow the tuna to marinate while you prepare the basil-walnut pesto sauce.

2. Prepare Pesto

Combine the fresh basil leaves, walnut pieces, a pinch of salt, and a dash of pepper in a food processor. Begin processing the mixture until it is finely ground. Gradually add the 1.5 tablespoons of olive oil while the machine is running. Taste the pesto and adjust the seasoning if necessary.

3. Grill Tuna Steaks

Prepare your grill for direct-heat grilling over high heat. Place the marinated tuna steaks on the grill, cover, and cook for about 3 minutes per side for rare. Look for beautiful grill marks and a slightly firm texture.
