How to Make Spelt with Crispy Sausage, Flowering Broccoli, and Green Garlic

1. Cook Spelt

Cook the spelt in a large pot of salted water until tender but still has a bite, about 45-50 minutes. Drain any excess water and set aside.

2. Brown the Sausage

Heat olive oil in a large skillet over medium heat. Add the spicy Italian sausage, breaking it into small pieces, and cook until crisp and browned, about 5-8 minutes.

3. Add Green Garlic

Add the thinly sliced green garlic to the skillet with the sausage. Sauté for 1-2 minutes, stirring frequently.

4. Combine Spelt with Sausage

Incorporate the cooked spelt into the skillet with the sausage and garlic. Season with salt and freshly ground black pepper. Stir occasionally for 5-8 minutes.

5. Add Greens and Cheese

Add the greens to the skillet in batches, stirring until wilted. Sprinkle with pecorino cheese, stirring to distribute it evenly. Serve immediately.
