How to Make Sausages with Sweet Pepper and Onion Stew and Fried Croutons

1. Brown the Sausages

Start by browning the sausages in a heavy skillet over medium-high heat. Place both sweet and hot chorizo in the skillet and let them cook, turning occasionally, until they are evenly browned on all sides.

2. Saute Vegetables

Once the sausages are beautifully browned, remove them from the skillet and set them aside. In the same skillet, add the olive oil, then toss in the thinly sliced onions, red bell peppers, and green bell peppers. Cook these vegetables until they are softened and caramelized, which should take about 10 to 15 minutes.

3. Add Spices and Vinegar

Stir in the smoked paprika and sherry vinegar with the softened vegetables. Let them mingle briefly, ensuring the spices are evenly distributed throughout the mixture.

4. Simmer Sausages with Vegetables

Return the browned sausages to the skillet, nestling them among the vegetables. Allow everything to simmer together until the sausages are cooked through, infusing the stew with their delicious flavors.

5. Fry Croutons

While the stew is simmering, take a separate pan to fry the bread slices. Cut the bread into crouton-sized pieces and fry them until they are golden and crisp.

6. Season and Serve

Just before serving, add the chopped garlic to the sausage and vegetable mixture in the skillet, stirring to incorporate its aromatic essence. Season with salt and pepper to suit your taste. Serve the stew hot, accompanied by the freshly fried croutons.
