1. Prepare Base Mix

Place the large egg yolks, lemon juice, salt, sugar, and a pinch of white pepper into your food processor. Blend these ingredients for about 10 seconds until they are well combined.

2. Add Olive Oil Slowly

With the processor running, begin adding the olive oil very slowly. Start with just a few drops at a time to ensure proper emulsification. Continue adding the oil until the mixture thickens and turns creamy, about 30 seconds.

3. Scrape and Blend

Stop the processor and scrape down the sides of the bowl with a rubber spatula. Process for another 5 seconds to ensure a smooth consistency.

4. Adjust Seasoning

Taste the mayonnaise and adjust the seasoning if needed. Add a bit more salt or white pepper to suit your preference. Give it one last quick blend to mix in any additional seasoning.

5. Store and Use
