    How to Make Blackberry-Basil Gastrique Sauce

    1. Caramelize the Sugar

    In a small, heavy saucepan, place the 2 tablespoons of granulated sugar over medium heat. Allow it to melt and turn a deep copper color, which should take about 10 minutes. Stir occasionally to ensure even caramelization.

    2. Add Balsamic Vinegar

    Once the sugar is caramelized, add the 2 tablespoons of balsamic vinegar to the saucepan. Stir well to dissolve the caramel completely.

    3. Add Blackberries and Other Ingredients

    Next, stir in the 12 ounces of ripe blackberries, 1 tablespoon of finely chopped shallot, 2 tablespoons of water, 1/8 teaspoon of Aleppo chile powder, and 1/4 teaspoon of kosher salt. Add freshly ground black pepper to taste. Cover the saucepan and let the mixture simmer for about 4-5 minutes.

    4. Blend and Strain the Sauce

    After simmering, transfer the mixture to a food processor and blend until smooth. Strain the sauce through a fine-mesh sieve into a clean bowl, using a wooden spoon or rubber spatula to push the solids through.

    5. Add Fresh Basil

    Finally, stir in the 1 tablespoon of thinly sliced fresh basil. Adjust the seasonings, adding more salt, pepper, vinegar, or sugar if needed to achieve the perfect balance of flavors.
