    How to Make Smoky Chipotle Salsa with Pan-Roasted Tomatillos

    1. Pan-Roast Tomatillos and Garlic

    Heat a 10-inch nonstick skillet over medium heat. Place the peeled garlic cloves and halved tomatillos, cut side down, in the pan. Sear for 3-4 minutes, until the tomatillos are well-browned.

    2. Flip and Cook Other Side

    Flip the garlic and tomatillos over and cook the other side until both are soft.

    3. Blend with Chipotle Chiles

    Transfer the browned garlic and tomatillos to a blender or food processor. Add the chipotle chiles and 1/4 cup of water. Blend until smooth.

    4. Season and Cool

    Pour the freshly blended salsa into a dish. Allow it to cool slightly, then season with a generous 1/2 teaspoon of salt.
