1. Prepare the Shallot and Lime Mixture
Thinly slice the shallot or use red onion if preferred. Grate the zest of the lime, then cut it in half and squeeze the juice from one half into a small bowl. Combine the sliced shallot or onion with the lime zest and juice, and season with a pinch of salt and a twist of freshly ground black pepper. Allow this mixture to sit for about 10 minutes.
2. Season the Tomatoes
Slice the tomatoes, arranging the slices on a platter. Sprinkle the tomatoes with a generous pinch of salt, allowing them to release their juices.
3. Assemble the Salad
Scatter the lime-soaked shallots over the seasoned tomatoes. Drizzle with extra-virgin olive oil and scatter the torn fresh herbs over the top. Taste and adjust the seasoning with salt, pepper, or shallot liquid as needed. Serve immediately.
