How to Make Fresh Pea Salad with Mint & Manchego

1. Cook Green Peas

Bring a medium saucepan of salted water to a boil. Add the green peas and cook for 3 to 4 minutes until bright green and crisp-tender. Transfer the peas to a bowl of ice water to cool, then drain.

2. Combine Salad Ingredients

In a large mixing bowl, combine the cooked green peas, julienned sugar snap peas, and julienned mint leaves.

3. Prepare Vinaigrette

In a small cup, whisk together lemon juice, olive oil, salt, and black pepper until emulsified.

4. Toss Salad
