1. Slice Ginger
Thinly slice 2 ounces of young ginger. If you have a mandoline, use it, but a very sharp knife will also work.
2. Prepare Radicchio
Place the sliced ginger in a large bowl along with the radicchio, which has been cored and cut into 8 wedges per head. Toss gently to combine.
3. Make Vinaigrette
In a small bowl, whisk together ¼ cup of balsamic vinegar and 1 teaspoon of sugar. Gradually add in ¼ cup of lemon agrumato oil and ¼ cup of extra virgin olive oil. Whisk until smooth and slightly thickened. Season with a pinch of Maldon salt and coarsely ground black pepper.
4. Combine Salad and Dressing
Pour half of the vinaigrette over the radicchio and ginger mixture. Toss gently but thoroughly to coat each wedge lightly with the dressing.

Serve the salad immediately, with the remaining vinaigrette on the side for guests to add more dressing to their liking.
