How to Make Apple and Endive Salad with Parsley and Salted Almonds

1. Prepare Salted Almond Mixture

Combine the chopped almonds and olive oil in a small bowl. Season generously with kosher salt and freshly ground black pepper.

2. Toss Salad Ingredients

In a large bowl, toss together the endive leaves, thinly sliced apple rounds, shallot rings, parsley, and mint leaves. Drizzle with fresh lemon juice and add Asian fish sauce if using. Season with salt and pepper to taste.
