1. Boil Coconut Milk and Water
Pour the coconut milk into a medium pot. Add enough water to make a total of 1 7/8 cups of liquid. Place the pot over medium-high heat and bring the mixture to a boil.
2. Simmer the Rice
Once the liquid is boiling, add the well-rinsed white rice and a pinch of kosher salt to the pot. Cover the pot with a tight-fitting lid and reduce the heat to low. Allow the rice to simmer for 17 minutes.
3. Steam the Rice
After cooking, drape a clean dish towel over the pot before replacing the lid. Let the rice steam for an additional 10 minutes. The towel will help absorb any excess moisture.
4. Fluff and Serve
Remove the lid and towel, fluff the rice with a fork, and serve immediately.
