1. Preheat Oven

Start by preheating your oven to 375°F.

2. Caramelize Onions

Heat the olive oil in a Dutch oven over medium heat. Add the finely chopped onion and ¼ teaspoon of salt. Cook the onion for about 12 to 14 minutes, stirring occasionally, until it turns a rich, caramel brown.

3. Add Liquids and Rice

Next, pour in the 2¼ cups of water and the cup of chicken broth. Increase the heat slightly and bring the mixture to a boil. Once it reaches a boil, stir in the 1½ cups of long-grain brown rice. Cover the Dutch oven with its lid and transfer it to the middle rack of your preheated oven.

4. Bake

Let it bake undisturbed for 65 to 70 minutes. This method ensures that the rice cooks evenly and absorbs all the wonderful flavors without the need for stirring or checking.

5. Fluff Rice

After baking, carefully remove the Dutch oven from the oven. Uncover it and use a fork to fluff the rice gently.

6. Absorb Moisture

To finish, place a clean, folded dish towel over the pot, then cover it again with the lid. Let it sit off the heat for about 10 minutes.

7. Season and Serve
