1. Cook the rice
In a large saucepan, combine ⅔ cup of short-grain rice with 6¼ cups of milk. Cook this mixture over low heat for about 45 minutes until the rice is bloated and there's some liquid left.
2. Prepare the egg yolk mixture
Lightly beat the 3 egg yolks in a bowl and then add ¾ cup of sugar. Mix in the 3 tablespoons of unsalted butter, along with ⅓ cup of raisins and ½ to ¾ cup of candied fruit cut into small pieces.
3. Beat the egg whites
Take the 3 egg whites and beat them until stiff peaks form. This will give the final dessert a light and airy texture.
4. Fold egg whites into the rice mixture
Gently fold the beaten egg whites into the rice mixture, being careful not to deflate them.
5. Preheat the oven and bake
Preheat your oven to 350°F. Pour the rice mixture into a buttered mold, ensuring it's evenly distributed. Cover the mold with foil and bake for 1 hour, removing the foil after the first 30 minutes.
6. Cool and serve
Once baked, let the Navarrese Candied Fruit Rice Delight cool before serving. Enjoy the blend of creamy rice, sweet raisins, and candied fruit in every bite.
