1. Soak the Rice
Soak the glutinous rice in water for at least 6 hours or overnight until it appears plump and translucent.
2. Steam the Rice
Place the soaked rice in a shallow heatproof bowl and add 1 cup of water. Set up your steamer, bring the water to a boil, place the bowl on the rack, cover, and steam for 30 minutes until the rice is tender and sticky.
3. Prepare Decorations
If using lotus seeds or raw peanuts, simmer them until they soften (10-15 minutes). For other nuts and seeds, roast them in the oven at 350°F for 5-7 minutes until fragrant and slightly golden.
4. Mix Rice with Sugar and Coconut Oil
Transfer the steamed rice to a large bowl, add the sugar and coconut oil, and mix well with a rubber spatula until the rice glistens.
5. Assemble the Dessert
Grease rice bowls or soup bowls with coconut oil. Arrange fruits, nuts, and seeds at the bottom in a colorful pattern. With greased hands, press a portion of rice into the bowl, creating an indentation in the center. Fill with sweet red bean paste, cover with another layer of rice, and press firmly to create a smooth top.
Opt for high-quality glutinous rice for the correct texture. Rinse until water is clear to remove excess starch.
Soak the rice for at least 4 hours, or overnight, and drain thoroughly before cooking.
Use high-quality nuts and dried fruits; toast nuts for flavor and ensure fruits are plump.
Use a cloth between the lid and pot when steaming to prevent mushiness and achieve a tender but chewy texture.
Arrange the cooked rice and add-ins beautifully in a contrasting serving dish to highlight the 'jewels'.
