1. Preheat Oven and Prepare Saucepan
Begin by preheating your oven to 350 degrees, placing the rack in the middle position. This will ensure that the rice cooks evenly once it goes in.
2. Cook Rice and Onion
Next, in a medium (3-quart) ovenproof saucepan, heat the oil over medium heat. Add the rice and chopped onion, stirring them together. Keep stirring for about 5 minutes until the rice turns a milky-white color.
3. Add Garlic
Add the garlic to the rice and onion mixture, and let it cook for just a few seconds until it becomes fragrant.
4. Add Chicken Broth and Salt
Pour in the chicken broth and add salt to taste. Stir everything together and let the mixture come to a boil. Once boiling, cover the saucepan and transfer it to the preheated oven.
5. Bake
Bake for 25 minutes on the middle rack.
6. Rest and Garnish
After 25 minutes, carefully remove the saucepan from the oven using oven mitts. Let the rice stand for 5 minutes to allow any remaining liquid to be absorbed. Finally, use a fork to fluff the rice and garnish it with chopped parsley for a fresh finish. Serve your Gulf Coast–style white rice pilaf warm.
