    How to Make Golden Shallot Fried Rice

    1. Infuse Oil with Turmeric and Shallots

    Heat the oil in a wok or a heavy, deep skillet over medium-high heat. Once the oil shimmers, add the turmeric and the shallots. Stir them around for about five minutes, letting the turmeric infuse the oil while the shallots become tender and translucent.

    2. Stir-Fry the Rice

    Raise the heat to high. Break up any clumps in the chilled jasmine rice using your wet hands. Add the rice to the pan immediately. Stir and toss the rice in the pan, making sure it gets coated with the turmeric oil and mixes well with the shallots.

    3. Season and Add Peas

    Once the rice is hot, sprinkle in the salt and add the green peas. Continue to stir-fry until the peas are cooked through and the rice is heated evenly.

    4. Add Fried Shallots and Serve

    Toss in the fried shallots and give everything one last stir to combine. Transfer the fried rice to a serving bowl and serve with lime wedges on the side, if desired.
