1. Prepare Glaze
In a small bowl, whisk together the water, cherry preserves, and whole-grain mustard to create a jammy-mustard glaze.
2. Season Pork Chops
Pat the pork chops dry with paper towels and season generously with kosher salt and freshly ground black pepper.
3. Sear Pork Chops
Heat the canola oil in a cast-iron skillet over medium-high heat. Once hot, add the seasoned pork chops and cook undisturbed for 4 to 5 minutes until the first side is browned.
