1. Prepare Pork Medallions
Take your pork tenderloin and cut it into slices about ¼-inch thick. Next, use a kitchen mallet to gently pound each slice.
2. Season Pork Medallions
Sprinkle both sides of each slice with a generous amount of salt and pepper.
3. Cook Pork Medallions - First Batch
Heat a large skillet over medium-high heat and add 1 tablespoon of avocado oil. Place the seasoned pork medallions into the hot skillet, being careful not to overcrowd the pan. Cook for about 2 to 3 minutes on each side. Once cooked, transfer the medallions to a paper towel–lined plate.
4. Cook Pork Medallions - Second Batch
Add the remaining tablespoon of avocado oil to the skillet and repeat the process with the rest of the pork slices.
5. Prepare Brown Butter
Keep the skillet on medium heat and add the butter. Let it melt and cook until it turns a deep amber color, about 3 to 4 minutes.
6. Add Sage to Brown Butter
Add the coarsely chopped sage leaves to the skillet with the browned butter. Cook for another 3 to 4 minutes.
7. Serve
Arrange the cooked pork medallions on a serving platter and generously pour the amber sage brown butter over them. Serve immediately.
