How to Make Crispy Pork Carnitas for Tacos

1. Prepare the Pork

Place the cubed pork shoulder into a wide heavy-bottomed pan.

2. Add Water, Salt, and Lime Juice

Add just enough water to cover the meat. Stir in the salt and fresh lime juice, making sure everything is well mixed.

3. Simmer the Pork

Bring the mixture to a simmer over medium heat, then cover the pan and let it cook for about 45 minutes.

4. Boil Away the Liquid

After 45 minutes, remove the lid and increase the heat to boil away the liquid.

5. Crisp the Pork

When the liquid is almost gone, reduce the heat to medium-low and let the pork fry in its own fat until it turns golden and crispy.

6. Finish and Serve
