1. Mix Dry Ingredients
Whisk together the 00 flour and kosher salt in a large mixing bowl until well combined.
2. Combine Wet Ingredients
In a small bowl, stir together the lukewarm water, instant dry yeast, extra-virgin olive oil, and sourdough starter.
3. Knead the Dough
Pour the wet ingredients into the dry ingredients and knead on a floured surface for about 4 minutes. Let the dough rest for 15 minutes before kneading again for 3-4 minutes.
4. Ferment the Dough
Divide the dough into three equal parts, shape each into a ball, and place them on a floured surface. Cover with a damp cloth and refrigerate for 8 to 24 hours.
5. Prep for Baking
Remove the dough from the refrigerator and let it sit at room temperature for 30 to 45 minutes. Stretch and shape the dough into pizza bases on a lightly floured surface.
