1. Prepare the Dough
In a food processor, combine 2 3/4 cups of bread flour with 2 1/2 teaspoons of active dry yeast and 2 teaspoons of sea salt. While the processor is running, slowly add a blend of 1/4 cup of extra-virgin olive oil with 1 cup of warm water. Process until the mixture forms into a soft, slightly sticky, elastic dough, about 2-3 minutes.
2. Let Dough Rise
Transfer the dough onto a piece of plastic wrap. Press fingers into the dough to create dimples, then fold the dough. Let it rise for 20 minutes, until it puffs up and shows focaccia-like indentations.
3. Prepare for Baking
If freezing, divide the dough, wrap it securely, and freeze. Thaw in the fridge the night before baking. When ready to bake, let the dough come to room temperature for 15-20 minutes. Preheat the oven to 550 degrees with a pizza stone or use an oiled rimmed baking sheet.
4. Shape and Bake
Dust a peel or another baking sheet with cornmeal. Stretch and shape the dough into a base for toppings. Slide the pizza into the oven and bake for 6-10 minutes until the crust is golden and cheese is bubbly.
