How to Make Quick-Pickled Sweet Peppers

1. Prepare Peppers

Take your 8 ounces of mini sweet peppers and slice them into thin rings. Divide these rings evenly between two clean ½-pint canning jars, ensuring you leave about ½ inch of headspace at the top of each jar.

2. Prepare Pickling Liquid

In a small saucepan, combine ½ cup unseasoned rice vinegar, ¼ cup white vinegar, 2 tablespoons raw cane sugar, 1½ teaspoons kosher salt, and ¼ cup water. Add a large smashed garlic clove to the mix. Heat this mixture over medium heat until the sugar and salt have completely dissolved and the liquid is hot to the touch, which should take about 3 minutes.

3. Remove Garlic and Pour Liquid

Once the pickling liquid is ready, remove and discard the smashed garlic clove using a fork. Carefully pour the hot liquid into the jars, dividing it evenly between the two, making sure all the peppers are submerged.

4. Cool and Refrigerate

Set the jars aside to cool for about 30 minutes. Once they have reached room temperature, seal the jars tightly with their lids. Place the sealed jars in the refrigerator and let the peppers pickle for at least one day before serving.

Variations

Classic Dill Pickles

Spicy Pickled Carrots
